Time to write

It has been some time since I have written. It is crazy to think that I can post on this daily. At least I am here now and I can share a few stories. Thanksgiving was amazing with lots of family and fun and food of course. It started with our 3rd annual Fairway Estates Turkey Trot. This is where all the kids and adults in the neighborhood meet in the culdesac at 9am and we do a bike, run for the kids. Then the adults take off on a bike, run and a walk for those that prefer to walk. We also donate money to a charity each year! What a blast and what a way to begin Tday!

My dad is a farmer so he likes his meet and potatoes so non stuffing was not an option. It was a great spread with the normal TDay food and then a few of my paleo additions found off one of my favorite sites Paleo Plan.

This recipe came verbatim from Everyday Paleo. It serves 5-8 adults. Thanks, Sarah!

1 lb mild Italian pork or chicken sausage, casing removed (Sarah used chicken sausages from her local butcher)
4 ½ cups mushrooms, diced
1 medium yellow onion, diced
6 celery stalks, diced
4 carrots, diced
1/2 cup chicken broth
1 tablespoon diced fresh sage
½ tsp minced fresh thyme leaves
½ cup dried cherries, finely chopped
½ cup slivered almonds
½ tablespoon garlic powder
4 tablespoons olive oil
Sea salt and black pepper to taste

Preheat oven to 350. In a large soup pot, sauté onions in olive oil until translucent. Add the sausage and brown. Add the carrots, celery, mushrooms, chicken broth, cherries, almonds, sage, thyme, garlic powder, salt and pepper. Mix well, bring to a simmer, and cook for 5-10 minutes or until the veggies begin to absorb the chicken broth. Transfer to a large glass baking dish, cover tightly with aluminum foil and bake at 350 for 45 minutes.

We ate, we played, kids swam, we chilled and we watched some football!

Since Thanksgiving, we have continued our Crossfit regimen and even have the kids doing CF Tuesdays and Thursday. They love the way it makes them feel and that makes me happy!

We also celebrated Hayley turning 7, can't believe my youngest is 7 already. Just some soccer fun times with her friends at soccer zone South!

I am looking forward to after the Holidays because it is just too easy to cheat. I do my best and cook a lot and my new favorite is Spaghetti Squash. Who knew! Yesterday I made a Pesto Spaghetti Squash and it was delish, from my Paleo Comfort Food Cook book. I also found a Gumbo recipe. I am brigning it to the in-laws and I am in hopes that Dad will cook it with me! He makes the most amazing Gumbo, which I will have.....but I would really like to try this one too. The best part is the Cauliflower rice, yes it is easy and delish! JBOD, you will love it.

That's all for know! Happy Cooking, working out and Family time to you and yours!

Breakfast is fabulous

Just a quick post here today. I am still working on the kids for Paleo and it is a constant battle. I really need them to jump on board. So far, they love breakfast and the baking. I can't seem to get them stuck on Lunch or Dinner menus. They are kids and love their mac-n-cheese and past. I did order some Paleo Pasta and I hope it shows up soon. I need to make chicken tetrazinni as soon as it arrives, a family favorite!

Some great breakfast ideas for you guys:
Chop up some of your favorite veggies and saute them in coconut oil, toss in eggs to scramble and top with avocados, S&P and hot sauce. This is so easy and good for you. My favorite veggies to do this with are: spinach, onions, tomatoes, jalapenos, mushrooms and bell peppers.

Another morning favorite, I made today, fried eggs and sweet potato hash. cut up onions and sweet potatoes and saute them in coconut oil add in nitrate free sausage and about a TBL of water and cover with a lid. Simmer until the sweet potatoes are soft. Meanwhile fry your eggs is coconut oil and then serve~ This morning I was out of my nitrate free sausage so I tool the All Natural Jimmie Deans sausage and made mini sausage meatballs and mixed those in instead. Very Yummy!

My daughter's favorite these days are eggs cooked in coconut oil, sprinkle a little nutmeg on them and she will eat 4 if you let her!

See breakfast is super easy! Now I just have to work on the other. I too am having a hard time finding my favorite lunch staple. Lately I have been resorting to my Paleo PB&J, frozen blueberries with a scoop or 2 of almond butter and then apples on the side. After that morning Crossfit work out I need some protein. If I only had some tuna I would make a quick tuna salad. My favorite is to mix tune with lemon juice, salt and pepper, red pepper flakes and capers. Serve over a bed of iceberg lettuce.

Off to work, get kids and then dinner time~! Chow

Wedding, Birthday, New Baby and Accident! Whew!

Love these ladies!

So it has been a while! The Bodfam went to Houston for Trish Bodman's wedding this weekend. How beautiful it was and what a stunning bride Trish was. Michael is one lucky man and I am so happy to welcome him to the family. Such a wonderful thing to hang out with my Bodman family. I am extremely lucky, you know why? Because my in laws are amazing and marrying Chris gave me the sisters I never had. Jessica, Trish, Rebecca, Theresa and our precious Juliana and some pretty great brothers too Jacob and Troy!

Friday on 11-11-11 I got a text photo of my new nephew, Baby Zane. Another amazing part to my family, Jeremy and Shanna had their first baby and its a BOY! Welcome Zane! This part of my family is just as fabulous.....I am truly blessed!

Saturday Morning - 11-12-12 Corbin's BDAY! What a blast and what a cutie. Corban loves his balls, Chris loves to spoil him and we all love to watch him go! I can't wait for him and Hayley to wear each other out one day. Love love love this precious boy!

Coming home on Sunday filled with Joy, we make it just in time to get Faith dressed and off to the soccer field for her 1pm game. The ladies played hard but could not pull off the win, the other team wanted it more and won 2-0. One more game this coming weekend to hold our title. Home sweet home after the game and the weather was so nice and Lulu was so hot from her game we decided to chill by the pool. Brave soul she was, she jumped into the 60degree pool. NUTSO! I did what I do best, lay down on my lounge chair and enjoyed the sun beating down on me. Lulu curled up in the chair beside me and we made our grocery list for our evening's plan "coconut shrimp and chicken, sweet potatoes and grilled veggies. As we lay there basking in the sun, our eyes so tired we drifted off to sleep.

Next thing I knew I was waking up in the sun and it was 4:30. Decided to wake Lulu and head off to the store. A quick trip for just a few thing and then we received an email about a bake sale in the hood. The twins around the corner baked home made chocolate chip cookies and were selling them outside. Of course we want to support our neighbors and kids so we parked the car in the garage and decided to walk over there in the beautiful weather. Grocery's wont go bad in a few minutes.

Faith, Grace and I headed to the twins, bought some cookies and ended up hanging for quite sometime, an hour to be exact! I looked at my watch and thought "Chris is going to be starving we better go" Off to the house to start dinner. Just as we get into the driveway we hear Hayley say "mom mom something happened" I got this eery feeling in my stomach and I studied her pulling up into the driveway on her bike making sure she looked OK. I could hear terror in her voice even though it was calm and sweet sounding. She slowly stepped off her bike and in a sweet voice "look mom I fell off my bike and somethings happening" as she looks up, blood goes everywhere...there is a gash under her chin about an inch wide and you can see the abrasions. I cupped her in my hands and ran inside to the kitchen. Chris came into the kitchen to see. The second we moved my hand from her chin we both looked at each other with fear in my eyes and said "ER room now"

I held my baby girl in the back seat and talked to her on the way to the Immediate Care center down the road. She was so sweet and so calm and kept saying how tired she was. Keeping her awake by talking to her about the accident and how she is going to be just fine. Although I was freaking out inside! She said her arm hurt and she could not move it. Her face looks awful, but that she said was not so painful.

The doctors got us in pretty quickly and after inspecting the cut, she said we have 2 options. 6 stitches or we can glue it back together. After explaining the difference to Hayley, she opted for glue. Still no tears, just calmness! The doctor came in with antiseptic cleaning and cleaned off the injury, that made her cry because it burned. I could only imagine the pain while cleaning that deep cut. My poor baby. Within seconds the cut was pushed together and glued shut. What a trooper. 5 minutes of drying went by and then off to the xray room. She was once again a trooper, putting her arm in the ways the nurse asked and then back to the room waiting on results.

Doctor entered the room again and sure enough, buckle fracture. We cleaned her up with a wet rag and the fiberglass cast was applied and wrapped. WHEW! What a night. Well now it is 7:45 and no way was I going to be able to cook nor did I have an appetite. Right next door, Wendy's! Ok so not Paleo and so not what I had planned. With 3 little munckins and a night like this we compromise. Wendy's and frosty's for the kiddos!

Home and tucked my baby girl in, everyone grubbed down on food and headed off to bed. Groceries!!! Yikes! Unpacked the groceries and off to bed.

5am the alarm goes off for Crossfit. Hayley says don't go mommy.....UMMM no question about it. I will stay and snuggle. 7am came before we knew it and we were all up and getting ready for the day. Hayley decided to tough it out and go to school. She was emotionally drained from the night before, but I have a feeling she wanted to show off her war wounds.

Dropped kids off and I headed to Yoga! Well just me and the fabulous Stephanie. Boy did she work us out! Challenging and great Yoga class. Then off to work for a few hours and back to Combine for the 12:30 WOD. So glad I went:
5 Rounds of:
5 HSPU (Hand Stand Push Ups)
10 SLDL (Stiff Leg Dead Lifts)
30 Air Squats

800M run! AWESOME work out!

Back to the house to shower, more work and then off to kid duty at 3:30. Pick up CG and Take Lulu and CG to soccer practice then meet at JiJitsu for Parent coach meeting at 5:20. Back home by 6pm to prepare my Sunday meal that never happened!

Fried Coconut Shrimp and Chicken
Mix Almond Flour, coconut flakes, salt and pepper in a bowl
Whisk together a few eggs
Dip the jumbo shrimp in the egg then the dry mixture and in the frying pan
Fry them in coconut oil only
Place them on a baking sheet
Repeat with chicken tenders

I put the baking sheet in the over at 350 for 15 minutes while I finished the sweet potatoes and grilled some veggies.

Veggies:
Red and Green Bell Peppers, Mushrooms and asparagus - mix them all in a bowl with balsamic vinegar, olive oil and S&P. Throw them in a grill basket and grill to your likings!

Dunzo!

Double Unders Ladies

Yesterday was such an amazing day! Showering husband with gifts in the morning and reading all his birthday wishes. He is a likable guy!

Up early to make a morning breakfast scramble for Hubby, get kids off to school and then hit the computer for some office time. My Tuesday is like your Sunday! Around 12 I started to get hungry so I went for some left over tomato basil soup and whipped up an avocado and artichoke salad from my new favorite cook book, Make it Paleo. Toss some spring mix with artichokes, heart of palms and avocado. I added some Olive Oil and Zinfandel vinegar we picked up in Napa, S&P and some balsamic vinegar! Ready in 10!

Time flies when you are following up on leads, before I knew it it was time to get DT to show a new client a condo and a unique house in Clarksville. What a fabulous location, just minutes from downtown and tons of great restaurants in walking distance. 2 BR 1 bath at $319K can't beat that price for Clarksville.

Rushed out quickly to make it to my girls first Kids Crossfit class. UGH the traffic, at least I made it in time to catch the last 30 minutes. How adorable, CSC Crossfit boys put on a great show with these ladies, doing air squats, burpees, box jumps, crab walks and 200M runs.
These girls and one boy worked very hard and did an amazing job! Tuesday's and Thursdays from 4:30-5:30 check it out if you live in Austin~ Click here to go to The Combine website.

With work outs complete it is time to wash up and celebrate. Little did Chris know of a few of our friends where meeting us out for dinner at the new Trudy's off 290W. I thought it was great and always happy to celebrate a birthday with friends!

Well crazy thing is that Hayley ate one too many bites of chocolate and she got a little crazy towards the end! Her heart was racing for a while.

Changing the subject :) Here is to Double Unders Ladies: If you don't know a double under, you should! Jump rump but the rope has to pass under your feet 2times. Well this morning at our 5:30am WOD, we did a benchmark. I did my first double under today and did a lot of them :) Work out was 5 clean and squats then Double Unders and Ab mat sit-ups. 50, 40, 30, 20, 10. Sadly I could not triple the amount and do single unders. Robert made us do attempts. He said tripling the amount is suppose to be a deterrent to try the DU. Yeah not for me. I would gladly knock out 150, 120, 90, 60 and 30 instead.... NOT TODAY. We had 20 minutes to do our WOD and I finished in 20:45. I'm proud of myself for finishing. Ladies, try a double under and you will know why I am not a fan~ email me when you think you know why!

Still hoping that those of you that are reading the blog are motivated to eat well, work out hard, play a lot and spend time with the people in your life that matter the most! Here is to yet another fabulous day in Austin Texas~ Make it a Great one!

Check out our coaches at CSC Crossfit! They can help you to be strong, stay strong and live well :)

Too Busy to Cook

Well its been a while because of life....3 kids, soccer tournaments and work. This past weekend was somewhat challenging to cook. Grace had 4 games, Faith had 2 games and Chris and I were running around making sure they were fed and well rested to play. Saturday at 6:45am I headed out with Faith to her game in Leander TX. That is a 30-45 minute drive so up early and out the door, Starbucks run and off to the fields. Starbucks have these yummy sausage biscuits but of course I get the egg sausage, no cheese and forget the english muffin. That's as close to paleo as I can get.

These games are so fun to watch because the girls play their hearts out. Then we rush back to Grace's game at 11, starving and I have 3 girls with me.... We decide to stop in at Kerby Lane. Delish Kerby Lane has some wonderful options with eggs, veggies and more. The girls all opted for Pumpkin pancakes :)

After a quick chow down, we get to the Slaughter field to watch the Pink Roses win their first tournament game. 2nd game at 3:00 enough time for us to get home and have some lunch rest the girls and head back to the fields again. Another WIN for the Pink Roses. Now it is 4:30 and they are all famished. I have to go sign a contract so the girls and Chris head to Jack Allen's with another Pink Roses Family, the Cohen's! I head home change quickly, sign the contract and run to meet the family! With the farm to table approach at Jack Allen's I can eat almost anything just hold the potatoes :)

The girls just can't get enough of each other, they talk us in to coming back to the house for some more play time.... Why not, our friends and the girls friends head to the Bodman house. Here we sit out by the pool and enjoy the sound of water, kids jumping on the trampoline and of course some brewsky's and wine. It is Saturday Night!

Sunday up again for some more soccer games. 2 for Grace and 1 for Faith! Another win for Faith's team and Grace's team pulled off 2 more wins! The best part is that Chris has been coaching these girls since they started playing soccer. They adore him, he is the best coach and the Pink Roses WON the tournament! Congrats!

Finally a trip to the store will allow me to plan for the week of food. I have been wanting to make these lamb balls with zucchini for some time now so hopefully I can make them tomorrow night. Sunday was filled with left overs for the fam but I was so tired of eating out that I opted for my favorite PB&J Paleo style with some apples. Mix almond butter with blue berries and there you have it! Sadly, Faith and Hayley all came down with something so we spent the evening snuggled up on the couch getting caught up on our Xfactor shows.

My goal is to cook as much as I can this week but not sure how that will pan out with Chris' bday being today and of course I have to take him to a Mexican dinner! Then we leave Thursday night to head to Houston. I CANT WAIT to see my family! Trish is getting married on Saturday and I am so excited for her.

At least I managed to make some homemade tomato basil soup last night, what goes with that with a house full of sickies....Grilled Cheese, so not paleo but I did use coconut spread instead of butter :)

Tomato Basil Soup
5 tomatoes on the vine - cut into quarters and toss in S&P and olive oil, roasted in the over at 350 for 30 minutes
Meanwhile, cut one onion and 5 garlic cloves. Saute them in a large pot with 1 TBL of coconut oil
Mix in the roasted tomatoes, 3 cups of vegetable broth, 1/2 cup of chopped basil, S&P to taste. Bring to a boil and then simmer for 30 minutes.
Upon completion place in a food processor to puree and serve!
This recipe comes from the Make it Paleo cook book! Enjoy!

Door bell just rang....Greenling farmer produce has arrived!
HAPPY BIRTHDAY TO MY FAVORITE MAN! CHRIS, MY HUSBAND FOR 12 YEARS. I LOVE YOU!

Quick Morning Breakfast

Good Morning Dear Friends,

Another great crazy day yesterday! Before I go there, what an amazing concert Taylor Swift was. I love the fact that she is so entertaining and so grateful! I tell my girls that the more gratitude you give the more great things will come to you. Taylor Swift must have said Thank you to her fans for where she is today 20 times. She is so sweet, talented and entertaining and I thoroughly enjoyed being with my entire family!

Needless to say, we all slept in yesterday and Hayley and Grace were a tad bit late to school....well worth it! Grandma even called yesterday morning to give her love and hear how much fun the girls had at the concert. So fun!

Yesterday was filled with showings and DT tours. Can I just say how much I LOVE the Austonian. Yes it is the most expensive in DT Austin but it is a dream building. Beautiful finish outs, ever amenity you can think of, amazing service and the best views!

Unfortunately I did not get home until after 5 again, dinner was not ready and the fam was starving and the cold front came in. We ran to Blue Bamboo for some Thai....not much for me to order on the menu so I opted for Tom Ka, spicy coconut milk soup with tomatoes, onions and mushrooms. That was nice since the cold front came in....Then we ran to HEB to get some goods for the girls, cereal, junk food, all the stuff they love. I try to feed them well but they get tired of my "healthy options" So does Chris. Can you believe the basket of Junk....they were amused!

Today: up at 5AM for our Friday Hero WOD! I think my arms might fall off today. 50 pull ups, 400M run, 21 65lb thrusters, 800M run, 21 thrusters, 400M run and 50 more pull ups. Time 21:40! :) Proud of myself today!

Home at 6:40, had my favorite P90X® Results and Recovery drink showered quickly and threw together a delicious quick and easy paleo breakfast. Chopped red onion sauteed in coconut oil, whisk 4 eggs together with chopped smoked salmon (3oz) scramble eggs in with onions, add chopped parsley, capers and chopped tomatoes. Season with S&P and your favorite hot pepper sauce. This is a slightly modified version from my "Make it Paleo" cookbook!

Kids off to school and now I have got to get read! 9-10meeting, 10am 360 showing, 10:30 at the W residence, 11:30 at the Four Seasons, 3pm inspection for 360 back home for dinner, family pumkin carving and I have to make a pumpkin pie paleo style tonight! Then dusk showing at 8-8:15 at 360 and then back home for more family time! Love my husband for all his support and love my kids for being amazing! Thank you Lord for an amazing life you provide to us every day!

Don't forget to say Thank you every day for all your blessings!
Make it a great day

The Day Gets Away From ME

Good Morning ALL,

I was so pumped to write yesterday and just could not find the time. My girlfriend, Emily, asked me the other day, where do you find the time to cook. Yesterday I found no time, after a 9am sales meeting, 12noon developer meeting, catching up on phone calls in the car on my way to preview a property for one of my clients who is in Afghanastan, setting up showing appointments for Thursday, following up with my sellers and trying to get a condo under contract that is not on the market yet it was 2:45pm. Had to rush to the school for a room mom meeting from 3-3:25 then off to middle school to pick up my 6th grader. Dropped her off quickly while chatting with tutor who was coming over to help Hayley with her reading, had to make sure we knew what all my precious baby needed to focus on. Grabbed 4 slices of turkey and ice water and ran back out the door at 4pm to make it to my 4:20pm showing in South Austin. By the time I was done it was 5 pm and I realized I did not have time to stuff the pork with garlic, season it and put it in the crock pot. It was supposed to have been cooking all day.....Hmmm what to do. Family will be starving, hubby will be starving! Pulling out of Johanna Street towards 1st street I see Polvos, one of the most delicious Mexican restaurants in South Austin. Is it Paleo? Of course not it is Mexican. Can I make it Paleo, YES!

I ordered everyone what they would want so the family could cheat...I on the other hand ordered steak fajitas with onions and pablanos, no rice, no beans not tortillas and headed home. I will say is very hard to not order a margarita or a beer while I sat there waiting for my food reflecting on my day thinking about everything I needed to do when I got home....I did not, I was good.

Needless to say, yesterday there was just no time.

This morning was great, 5am up and out to CSCCrossfit. We did some amazing things today. Power Shrugs, High Pulls and Squat Snatches, the girls (my CSC friends, Julie and Brandy) and I made jokes about being snatch happy, gotta be silly too! Not that easy, snatching a bar up the front of your body over your head and then squatting with it. 55lbs for me was about all I could take. Then our fabulous WOD. 15 muscle snatches, 20 box jumps and 25 "good mornings" time was 13:13. What is a good morning? I have never done one but is called good morning because apparently when you wake up the next morning your body will ache "GOOD MORNING" I will let you know tomorrow. The movement, you lift a weight bar over your head and rest it on your traps, slight bend in the knee, flat back, looking forward and you bend over to the ground and back up. Sounds simple and easy.....Lets see what my hammies say tomorrow!

Rushed home but 6:40am got girls up, started breakfast! Went for my new "Make it Paleo" cook book and make coconut nested eggs and breakfast sausage for hubby and me! Kids went for the cereal bowls (bought from whole foods, gluten free and they are eating it!!!)

7:25 Chris out the door with Grace and Hayley and Faith and I get to finish up in the kitchen, eating and cleaning. Then Faith surprised me and says "do we have any lettuce". Of course, in the fridge drawer, she grabs the butter lettuce. "is this real lettuce mom?" Yes my dear, there is no fake lettuce that I know of. So PROUD of her....she makes her first paleo lunch butter lettuce wrapped turkey bites. So cute and so healthy! So PROUD!

7:45 out the door to school....I cant find my keys so I have to use Chris's set. What's new, I always loose my keys. Home by 8:05, finally shower and hit the computer. Oops gotta find my keys. After searching the entire house, Chris calls me and says did you put the key finder on them that I bought your Christmas last year? Um Yes, but there were too many things on my keys so I took them off and that is in my car....Not gonna help. We chatted about it and I asked Saint Anthony to please help me find my keys. Sure enough I walk outside retracing my steps when I got home last night. Remembered I pulled a sign out of my back seat to put in the yard for a new listing....Keys found....In the back seat! Whew!

Today, I made time for paleo breakfast. I have a lunch appt and will eat at Toastie's a new fabulous sub shop in DT Austin. Here is the best part....they have a sub called Banh Mi with slow roasted pulled pork topped with pickled cucumbers, red onion, carrots, topped with fresh Cilanto, red chile and a squeeze of lime. They put it over salad for me instead....Perfect!

Tonight no cooking....Family Date Night!!!! Going to see Taylor Swift and will eat a treat at Maria Maria...I will make it paleo for sure!

Paleo and Kids

Many of you know how much I enjoy health and nutrition. I just wish my kids enjoyed it as much as I do. I realized this weekend while talking with some of my girlfriends how passionate I truly am about putting the right things in our bodies but making it taste amazing too.

I have these 3 beautiful little girls that are very active and I am always worrying about their nourishment. It comes only from my heart! Faith my oldest, is such an amazing young lady at the age of 11. So mature, so beautiful inside and out and has one of the most caring hearts. She loves her family more than anything and always wants to do the right thing. She is extremely active and fun, but I don't think she eats enough or feeds her muscles with the right foods. Even though I cook a lot of delicious good food for them, she does not go for it. My idea....lets cook and create together. Today was day 1 and we made a great breakfast full of protein and good fats, but all natural ingredients....SHE LOVED IT! We named it Poached Green Eggs. Inspired my by new cookbook "Make it Paleo" we started cooking. Green sauce is simply avocado, lemon juice, garlic and water ground in a food processor to create a yummy sauce to top on your poached egg. (by the way, I rarely measure anything)

Then there is gentle Grace, my sweet 8 year old (almost 9)!!! She will try almost anything but loves seafood. We started cooking Saturday night and created a seafood feast! Sushi, steamed crab legs and seared Ahi tuna. Okay, not many kids will eat seafood but this girl will. Grace has such a sensitive and sweet soul. She loves her family and her heart is filled when she gets quality time and hugs. She is one stunning beauty!!!! Just adore this girl and I am looking forward to cooking with her in the kitchen more often!!!

Ahh and the final munchkin of the group, Hayley Anne...aka Lunkins, Lunkers, Lunk the Dunk....Which ever on you say she will respond to. Funny story about this little girl is that when she learned her name she learned it as Hayley Lunkins Bodman. For years, probably until she was 3 1/2 maybe even 4 she swore her name was Hayley Lunkins not Hayley Anne. So adorable and our Beautiful Baby, now 6 almost 7! Hayley is full of life, fully aware of what is going on around her and is always thinking ahead. Watch what you say and do around this monkey because she will repeat!!! If we could all have the zest for life this girl does, we would all be so much happier. Hayley loves to eat and dance, we call her our entertainment! She can eat out anyone, ask my neighbors. They always say "how can that little girl put away so much food?" It must be from her dad! She too loves to help in the kitchen, her new favorite thing to do is to make Dad his coffee in the morning! Precious Girl.

The one that made it all happen....my husband! Chris is such an amazing man and hands down the BEST father any child could ever ask for. He is the oldest of 8 and I believe he is a kid magnet. He was a stay at home dad for a while when we lived in San Diego, CA. and I remember my girlfriends use to call me while I was at work and tell me how much fun they were having. Laying out by the pool and where were the kids....in the pool with Chris! Great Man! Chris is not a cook, not sure why not because his mom baked and cooks some amazing staples. Staples for his time growing up that surely he could have brought home to me but he swears to this day that he has NO CLUE how to cook....I get to figure them out when we visit the Bodman family and boy are they good. Chris likes to eat!!! He is the taste tester, the one who licks the bowl and the one that always asks for desert. He is my inspiration to figure out how to bake paleo deserts. To keep his sweet tooth happy without sugar, dairy or wheat. This is fun! My other love with this man is working out and staying fit. We enjoy intense crossfit workouts together and he pushes me to be stronger every day! I absolutely adore and love this man!

Before I leave you today, I have to mention my mom! Some of our baking and cooking is going to come from her but surely modified. My mother is an amazing cook. She taught me how to open up a pantry or a fridge and create something delicious out of "not having anything to eat" My goal is to modify and create it paleo style. Sharing my first, what I will call "soozi's sausage stir fry"

At my mom's one weekend (on the farm) they were all eating the normal pastas, breads, starches and meats. I ran to the store so that I could eat with them too. Sausage, green and red bell peppers, garlic, jalapenos, tomato's and red onions. Ohh and don't forget the avocados for toppings. I basically stir fried it all together in coconut oil, added salt, pepper and garlic powder, topped it with the avocados and delish! Paleo easy!

That is just a small intro to how this is going to go. I will cook with the girls, Chris will taste it all and hopefully we can all enjoy and learn from one another. I will mention many friends and family members throughout this blog as they are truly my inspiration!
